I went to the Chinese grocery and picked up some water spinach. It is a green
vegetable and good for eyesight. It's an easy recipe and fast cooking.
I served with hot boiled rice. The taste just like home. Yum.
Ingredient :
1. 1 pound of water spinach cut to 2 inches long.
2. 3 cloves of garlic, smashed.
3. 3 chili, smashed.
4. 2 Tbsp of oyster sauce.
5. 1 Tbsp of soy sauce.
6. 1 Tbsp of black soy sauce.
7. 1 Tbsp of vegetable oil.
Directions :
1. Put oil in a wok with high heat.
2. Add water spinach and all the ingredients, quickly stir just to combine.
3. Serve with boil rice. Enjoy.

Crispy Fish Salad (Yum Pla Duk Foo) ยำปลาดุกฟู
Today I'm posting one of my favorite dishes of all time. Serve as an appetizer or a main dish. It's easy to make.
Ingredients :
1. 1 pound of catfish
2. 1 green mango or green apple, cut to thin strips to make 3 cups.
3. 1/2 cup of peanuts.
4. 2-3 Tbsp. of shallot thinly sliced.
5. 1Tbsp. palm sugar.
6. 2 Tbsp. fish sauce.
7. 3 Tbsp. lime juice.
8. 1 Tbsp. chopped Thai chili pepper.
9. 1 Tbsp. chopped garlic
10. 1 Tbsp chopped cilantro.
12. 2 cups of oil for frying.
13. 1/2 gallon of water.
Directions :
Fry fish
1. Put water in a pot, add fish. Bring to a boil for about 15 mins then take the fish out and let it cool down. Discard the water.
2. Use 2 forks to pull fish to small pieces.( I use my hands.)
3. In a pan put in oil with medium heat. Add fish & fry until almost crispy. Add peanuts and fry until fish is crispy and golden brown.
4. Drain excess oil with a paper towel. Set aside.
Salad
1. Mix palm sugar, fish sauce, and lime juice un til well combined.
2. Add mango, shallot, cilantro, Thai chili pepper, and garlic.
3. Serve over fish or put in a small bowl.
4. Enjoy!

Green Curry Chicken (แกงเขียวหวานไก่)
Hi there,
Today I found Thai eggplant at a local market which I considered lucky.
Anybody that likes Thai food has to try this recipe. It's so good.
Ingredients :
1. 1/2 pound chicken cut to bite size.
2. 1 can (16 oz.) coconut milk.
3. 1 pound Thai eggplant cut to bite size.
4. 2-3 Tbsp. green curry paste. ( I like spicy. I put 3 Tbsp.)
5. 2 Tbsp. soy sauce
6. 1 Tbsp. fish sauce
7. 1 Tbsp. sugar
8. 1/2 cup sweet basil
9. 6-8 kaffir lime leaves
10. Red bell pepper cut to 2 inch strips for garnish.
11. 1 cup of water.
Directions :
1. In a pot, put in 1/4 can of coconut milk. Add green curry paste on medium low heat until aromatic.
2. Add chicken and cook until chicken is done.
3. Add the remaining coconut milk, water, and Thai eggplant. Bring to a boil.
4. Add soy sauce, fish sauce, sugar, sweet basil,
and kaffir lime leaves. Turn stove off.
5. Garnish with red bell pepper and serve with white rice.
6. Enjoy!

Ingredients :
1. 1 pound squid cut to bite size pieces.
2. 2 Tbsp red curry paste
3. 6 cloves garlic finely chopped
4. 1 Tbsp chopped Thai chili pepper (optional)
5. 1/2 Tbsp fish sauce
6. 1 Tbsp soy sauce
7. 1 tsp sugar
8. 1 cup sweet basil.
9. 6 kaffir lime leaves.

Tom Yum Kha-moo (ต้มยำขาหมู)
Hello everyone,
Today I'm posting Tom Yum Kha-moo. It's a soup recipe and can be serve spicy or not spicy according to your taste. Just don't over do it.
Ingredients :
1.4 pork hocks. (It can be substitute with pork ribs, or pork butt.)
2.1/2 gallon of water.
3.2 stalks of lemon-glass cut 2 inches long.
4.6 kaffir lime leaves.
5.4 slices of galanga.
6.2 smashed shallots
7.1 Tbsp. of fish sauce.
8.1 Tbsp. of salt.
9.1 Tbsp. of soy sauce.
10.1 Tbsp. of chopped chilli pepper.
11. 2 Tbsp. lime juice.
12. 1/2 cup cilantro (cut 1 1/2 inches long)
13. 1/2 cup green onion ( cut 1 1/2 inches long)
Directions :
1. In a crock pot, put in water, pork hocks, lemon glass, kaffir lime leaves, galanga, shallots, salt and soy sauce.
2. Set crock pot on high for 3 hours or low for 6 hours.
3. When the pork is tender put in a bowl, add fish sauce, lime juice and chili pepper to your taste. If you don't like spicy put less chili pepper. Garnish with cilantro and green onion.
4. Serve with cooked white rice. Enjoy!
PS. If you don't have crock pot, you can use a regular pot and stove top.

Had Yai Fried Chicken (ไก่ทอดหาดใหญ่)
Hello Everyone, today I'm posting my favorite recipe Had Yai Thai Chicken. It's food from southern Thailand. It's easy and delicious and popular food throughout Thailand.
Ingredients:
1. 2 pounds of bone in, skin on chicken (breast, thigh, leg or wing). I used thighs only.
2. 1 whole garlic
3. 1 tsp. whole peppercorn
4. 1 tsp. coriander seed
5. 1/2 tsp.funnel seed.
6. 2 Tbsp. fish sauce
7. 2 Tbsp. soy sauce
8. 1 tsp. salt
9. 2 Tbsp. sugar
10. 1 tsp. baking powder
11. oil for deep fry
12. 1 cup of shallot thinly slice
13. 2 cup all purpose flour.
Directions :
Marinated :
In mortar and pestle, put in garlic, whole peppercorn, coriander seed, and funnel seed. Making rough paste mixer and set aside.
In a bowl put in chicken, fish sauce, soy sauce, salt, sugar, baking powder and paste mixer. Marinated in refrigerator at least 2 hours, overnight is the best.
Deep fried :
1. In frying pan, put in oil. Seasoning shallot with salt to taste put in 2 Tbsp. of all purpose flour and deep fried in low heat until golden brown, put on paper towel to drain the excess oil. Set aside.
2. Put marinated chicken in remaining all purpose flour until coated and deep fried in the oil that used to fry shallot in medium low heat until chicken cooked through and golden brown, put on paper towel to drain the excess oil.
3. cut chicken into pieces sprinkle with fried shallot.
4. Serve with sweet chili sauce and sticky rice. Enjoy!.
