Spicy squid (Pad Ped Pla-meuk) ผัดเผ็ดปลาหมึก

Hello there, 
Today I'm posting a spicy squid recipe for somebody that like spicy and like squid. I like it but my kids don't like spicy food.





Ingredients :
1. 1 pound squid cut to bite size pieces.
2. 2 Tbsp red curry paste
3. 6 cloves garlic finely chopped
4. 1 Tbsp chopped Thai chili pepper (optional)
5. 1/2 Tbsp fish sauce
6. 1 Tbsp soy sauce
7. 1 tsp sugar
8. 1 cup sweet basil.
9. 6 kaffir lime leaves.
10. 2 Tbsp oil
11. 1/4 cup red bell pepper, green bell pepper cut to long strip for garnish. 

Directions :
1. Add oil in a pan, put garlic, Thai chili pepper, and red curry paste on medium low heat until aromatic.
2. Add squid, fish sauce, soy sauce, sugar cook for 2-3 minutes.
3. Add sweet basil, kaffir lime leaves foe 1 minute. Turn stove off.
4. Garnish with bell pepper and serve with white rice. 
5. Enjoy!.

Egg Tofu Soup (ต้มจืดเต้าหู้หมูสับ)

H Hello there, Today I'm posting Egg Tofu Soup recipe that fast and easy to cook. I loves it, my kids love it too.

,Today, I am posting this soup recipe that very fast and easy to cook. My kids loves it
Ingredients :
1. 1 pound ground pork
2. 2 (8 oz.) tubes egg tofu cut to big pieces.
3. 1/2 gallon water
4. 2 Tbsp pork seasoning (bullion)
5. 1 Tbsp soy sauce
6. pinch of pepper
7. 1 Tbsp fried garlic
8. I/2 cup cilantro cut to 1 inch long pieces
9. 1/2 cup green onion cut 1 inch long

Directions :
1. In big pot, put in water, add pork seasoning, soy sauce, and pepper. Bring to a boil. 
2. Add pork to the boiling water  by pinching with your finger to make small pieces.
3. Add egg tofu, cook for a few minutes. Turn the stove off.
4. Add cilantro and green onion.
5. Sprinkle with fried garlic, serve with white rice or over white rice. Enjoy!

Tom Yum Kha-moo (ต้มยำขาหมู)

Hello everyone,
  Today I'm posting Tom Yum Kha-moo. It's a soup recipe and can be serve spicy or not spicy according to your taste. Just don't over do it.


Ingredients :

1.4 pork hocks. (It can be substitute with pork ribs, or pork butt.)
2.1/2 gallon of water.
3.2 stalks of lemon-glass cut 2 inches long.
4.6 kaffir lime leaves.
5.4 slices of galanga.
6.2 smashed shallots
7.1 Tbsp. of fish sauce.
8.1 Tbsp. of salt.
9.1 Tbsp. of soy sauce.
10.1 Tbsp. of chopped chilli pepper.
11. 2 Tbsp. lime juice.
12. 1/2 cup cilantro (cut 1 1/2 inches long)
13. 1/2 cup green onion ( cut 1 1/2 inches long)

Directions :

 1. In a crock pot, put in water, pork hocks, lemon glass, kaffir  lime leaves, galanga, shallots, salt and soy sauce.
 2. Set crock pot on high for 3 hours or low for 6 hours.
 3. When the pork is tender put in a bowl, add fish sauce,  lime juice and chili pepper to your taste. If you don't like spicy put less chili pepper. Garnish with cilantro and green  onion.
 4. Serve with cooked white rice. Enjoy!

PS. If you don't have crock pot, you can use a regular pot and  stove top.

Had Yai Fried Chicken (ไก่ทอดหาดใหญ่)

Hello Everyone, today I'm posting my favorite recipe Had Yai Thai Chicken. It's food from southern Thailand. It's easy and delicious and popular food throughout Thailand.


 Ingredients:

1. 2 pounds of bone in, skin on chicken (breast, thigh, leg or wing). I used thighs only.
2. 1 whole garlic
3. 1 tsp. whole peppercorn
4. 1 tsp. coriander seed
5. 1/2 tsp.funnel seed.
6. 2 Tbsp. fish sauce
7. 2 Tbsp. soy sauce
8. 1 tsp. salt
9. 2 Tbsp. sugar
10. 1 tsp. baking powder
11. oil for deep fry
12. 1 cup of shallot thinly slice
13. 2 cup all purpose flour.

Directions :

Marinated : 
  In mortar and pestle, put in garlic, whole peppercorn, coriander seed, and funnel seed. Making rough paste mixer and set aside.
 In a bowl put in chicken, fish sauce, soy sauce, salt, sugar, baking powder and paste mixer.   Marinated in refrigerator at least 2 hours, overnight is the best.

 Deep fried :
 1. In frying pan, put in oil. Seasoning shallot with salt to taste put in 2 Tbsp. of all purpose flour and deep fried in low heat until golden brown, put on paper towel to drain the excess oil. Set aside.
 2. Put marinated chicken in remaining all purpose flour until coated and deep fried in the oil that used to fry shallot in medium low heat until chicken cooked through and golden brown, put on paper towel to drain the excess oil.
3. cut chicken into pieces sprinkle with fried shallot.
4. Serve with sweet chili sauce and sticky rice. Enjoy!.

Spicy salt chicken (ไก่คั่วพริกเกลือ)

Hello there,

   I'm posting this recipe for anybody that likes spicy Thai food with a tight budget. I like to cook Thai food at home because Thai restaurants in the US don't taste like I'm used to and it's hard to find a good Thai restaurant near where I live.

 Ingredients :

1. 1 lb of chicken cut into bite sizes.
2. 2 Tbsp of chopped garlic
3. 2 Tbsp of chopped Thai chili pepper.
4. 2 Tbsp of chopped cilantro.
5. 2 Tbsp of chopped green onion.
6. 1/2 tsp of salt
7. 2 Tbsp of canola oil.
8. 1/2 tsp of sugar.
9. 1 tsp of chicken seasoning.
10. 1 tsp of light soy sauce.

Directions :

  Put 1 Tbsp of canola oil in a pan, add chicken with medium high heat until cooked, put in a bow, and set aside.
  Put in 1 Tbsp of canola oil. Add garlic, Thai chili pepper, & stir for 2 minutes. Add  cooked chicken,green onion, cilantro, salt, sugar, chicken seasoning and light soy sauce. Stir for one or two more minutes until well combined.
  Serve with cooked white rice.
  Enjoy!.

Roasted Duck Curry with Pineapple (Gaeng Phed Ped Yang) แกงเผ็ดเป็ดย่าง

Hello there,
Today I'm posting a duck curry with pineapple recipe, one of my favorite dishes.  It's easy to make and tasty.

Ingredients:
1 . 1/2 pound of roasted duck.
2. 3 cups of pineapple sliced into bite-sized pieces.
3. 2 Tbsp. of red curry paste.
4. 1 cup of whole grape tomato.
5. 1 can of coconut milk (14.5 oz)
6. 1.5 Tbsp of fish sauce.
7. 1 Tbsp of soy sauce.
8. 3-5 Kaffir lime leaves.
9. 1/2 cup of Thai basil.
10. 1 tsp of Sugar (optional).

Directions:
1. Put 1/4 cup of coconut milk in a pan over medium heat, add curry paste, stir constantly for 3 minutes until the oil starts to separated from the coconut milk.
2. Add the remaining coconut milk, roasted duck, pineapple, and grape tomatoes.
3. Add fish sauce, soy sauce, kaffir lime leaves, & Thai basil.  Taste before adding sugar because pineapple is sweet.
4. Let it boil then turn off the stove.
5 Serve with cooked white rice.

Stewed Pork (หมูอบนมสด)

Hello there!

 Today I'm posting my new stewed pork recipe. It's easy to cook and budget friendly.

Stewed Pork.

Ingredient
1.5 pounds of pork or pork spare ribs cut into bite-size pieces
5 cloves of garlic
1 Tbsp of whole peppercorn
1/4 cup of cilantro
2 Tbsp of oyster sauce
1 Tbsp of black soy sauce
1 Tbsp of light soy sauce
1 tsp of salt
2 Tbsp of olive oil
1/2-1 cup of evaporated milk
1 Tbsp of sugar

Directions
1. In a mortar, smash all the garlic, black pepper, and cilantro until well-mixed and set aside.
2. Marinate pork with all the ingredients (including the garlic, pepper, & cilantro paste) for at least 2 hours.  Marinating overnight is best.
3. In a pan, cook the marinated pork (with all the juices) with medium high heat for 5 minutes.
4. Add 1 cup of water, simmering with the lid on for 15-20 more minutes until the sauce is reduced by half and pork is tender.
5. Serve with cooked white rice.
6. Enjoy !
